Usually the printer is still on the network but your iPhone has lost the route to it — the printer went to sleep, changed its local IP address, dropped onto a different Wi-Fi band or guest network, or its AirPrint service record went stale. That's why the print sheet says "No AirPrint printers found" even though the printer is on.
